Kombucha Class with Zachary Pasillas Wednesday at The Green Boheme!

Zack Pasillas has been home-brewing delicious Kombucha since 2009, he is also Studio Director at The Yoga Seed Collective, where he teaches yoga and the occasional Kombucha Brewing Workshop.

Simply Wild Blueberry Cobbler
Makes 8 servings
Crust
• 3 cups pecans (presoaked for 6-8 hrs, rinsed, then dehydrated until completely dry 24-48hrs) or, if no dehydrator then use unsoaked
• 1 1/2 cups pitted medjool dates
• 1/2 teaspoon sea salt
• Dash cayenne
Wild Blueberry Filling
• 4 cups blueberries fresh, or frozen, th...awed, and drained
• 1 cup pitted medjool dates
• ¼ cup lemon juice
• 1/8 tsp Himalayan sea salt
To make the crust: In a food processor outfitted with the “s” blade, place the pecans and dates, separating the dates and placing individually around the pecans. Process until the mixture sticks together (while processing, the mixture will come up the sides of the food processor and begin to fold inward toward the center of the food processor. Crust should hold together when pressed between your thumb and forefinger, but should not be oily.
To make the filling: Place 2 cups of the blueberries, dates, lemon juice, and sea salt in a blender and process until smooth. Transfer to a mixing bowl. Add the 2 cups remaining blueberries and fold into blended portion. Press half of the crust in the bottom of a shallow 9-inch square glass baking dish. Add the filling. Crumble the remaining crust lightly on top, allowing some of the fruit filling to show through. Serve and enjoy!!!
